Moor Hall - Aughton
Local produce is everywhere at this restaurant north of Liverpool, and the best dishes shine the spotlight on single ingredients. Others balance lots of different components - still tasty, but feeling less product-driven

Sorn - Bangkok
Intensively flavorful and often very spicy tour of Southern Thai cuisine. Truly unique among all the three Michelin starred restaurants

Sushi Shikon - Hong Kong
Sushi that’s very close to the best one can get in Japan, plus several amazing appetizers. A wonderful meal

Caprice - Hong Kong
Solid, sometimes exceptional, French fare with great service and magnificent views of the Hong Kong harbor. Unfortunately without any local influences

Steirereck - Vienna
Seasonal cuisine with Austrian influences that had some good moments, but ultimately didn’t justify its three stars

Jungsik - New York
Elegant cuisine that incorporates Korean spices and preparation techniques. Some superb dishes, but also some misses

Casa Marcial - Arriondas
Modern cuisine reflecting Spain’s Asturias region. Very creative, and with a few truly spectacular dishes. Worth the trip to the northwest of Spain

Waldhotel Sonnora - Dreis
French cuisine with some Mediterranean influences that features many amazingly delicious dishes. Highly recommended

Casa Perbellini 12 Apostoli - Verona
Italian cuisine that was quite creative, but tended to fall in the “interesting” rather than the “delicious” category

Cheval Blanc - Basel
French cuisine executed with Swiss precision leads to intensely flavorful, but still well-balanced dishes that are also incredibly delicious. At the high end of three stars

Sézanne - Tokyo
French cuisine with Chinese influences and Japanese ingredients. Consistently delicious and worthy of its three stars

Jordnær - Gentofte
Wonderful seafood dishes, with especially strong appetizers. Combined with an unusually welcoming service, this was a great experience

RE-NAA - Stavanger
Consistently delicious seafood dishes made with local ingredients form the backbone of the tasting menu. A well-deserved three stars

Benu - San Francisco
Elegantly executed, technically perfect Korean-inspired cuisine. Unfortunately, the flavors were a bit too muted for my taste

Le Gabriel - Paris
A tasting menu inspired by the chef’s native Brittany had some good seafood dishes and an truly outstanding chicken. Overall though, this was among the weaker of Paris’ three-starred restaurants

La Table du Castellet - Le Castellet
Two seasonal tasting menus, one based on vegetables, one based on seafood, are both very well designed - a great choice for vegetarians and pescatarians. Dishes were generally lovely, but only a single dish was solidly in three-star territory

ES:SENZ - Grassau
Over two dozen unique presentations often acknowledged the restaurant’s location near the Bavarian Alps. Great main courses were bookended by a few misses among the appetizers and desserts

Quattro Passi - Marina del Cantone
A beautiful ocean view and a few amazing pasta and seafood courses - a nice payoff after our arduous journey to get to this restaurant

The Ledbury - London
Excellent modern French cuisine with many British ingredients, including several mushrooms grown in-house. Many delicious dishes made it easy to forget a few service mishaps

Harutaka - Tokyo
Japan’s only current three-star sushi restaurant serves consistently delicious nigiri, but its appetizers are a bit more hit and miss
